Sheryl Pfeffer, 57

Amboy/Mapleton — Sheryl Pfeffer, age 57, of Amboy/Mapleton, died Jan. 31, 2009, at St. Mary’s Hospital in Rochester after a 30 year battle with lupus. Funeral service was held Feb. 5, 2009, at the United Church of Mapleton. Rev. Betty Johnson officiated. Burial was at Sterling Cemetery. Olson-Tichenor Funeral Home was in charge of arrangements.

Sheryl was born on Sept. 12, 1951, in Blue Earth to Henry and Violet (Renkly) Mensing. She graduated from Blue Earth High School in 1969. Sheryl graduated from Mankato State University with a degree in Education. On Aug. 10, 1979, Sheryl was united in marriage to Bill Pfeffer. Sheryl taught speech and special education in the Maple River School District for 35 years. She enjoyed family, teaching, taking pictures, the outdoors, traveling, downhill skiing, snowmobiling, and four wheeling. Her nieces, nephews, and great nieces and nephews were a big part of her life.

Sheryl is survived by her husband Bill, two sons, Patrick (Marissa Lachmiller) of Mapleton and Steven of Mankato; mother, Violet of Blue Earth; siblings, Dale (Linda) Mensing of Lester Prairie, Kent Mensing of Blue Earth, Lisa Mensing-Kivel (Ed) of Stillwater and Neal (Brenda) Mensing of Blue Earth; brother-in-law, Chuck (Betsy) Pfeffer of Bentonville, Ark.; sister-in-law, Nancy Schulte of Phoenix, Ariz.; many nieces and nephews and great-nieces and nephews; and faithful pet, Sophie.

She is preceded in death by her father Henry and two nephews, Ryan and Nathan.

In lieu of flowers, memorials are preferred to Echo Food Shelf, the Salvation Army, VINE, and the Yellow Ribbon.
